Gluten: An American health epidemic?

As little as 10 years ago, very little was known about gluten sensitivity and celiac disease. People were going to the doctor and receiving a diagnosis of irritable bowel syndrome, anxiety issues, stress issues or many other diagnosis that didn‘t address the gluten issue.. A lot has happened in the last 10 years. Before 2005, I predicted that gluten sensitivity was going to be a health epidemic in America. Today people are starting to take notice.

What is gluten?
What is gluten sensitivity?
Is the inflammation/damage permanent?
How long does it take to heal?
Are the symptoms the same with every person?
How do you get diagnosed?
How prevalent is the problem in America?
Where do I go to get properly tested?
Is gluten sensitivity really a big problem?
Is gluten the only food that is so problematic?
